Directions
- Pre-heat oven to 375
- Melt the butter in a skillet over medium heat. Add the mushrooms, cover them with a lid or foil, and
cook for 5 minutes. Uncover the pan and add the onion, shallot, and salt. Cook until the veggies are softened (5 to 10 minutes). - Add the red bell pepper, garlic, and Cajun seasoning, and cook until the bell pepper is soft, about 5 minutes more. Let the mixture cool for 10 minutes.
- In a large bowl, combine the ground beef, cooled veggie mixture, saltine crackers, milk, egg, egg yolk, mustard, ketchup, and Worcestershire sauce. Mix well until the mixture looks fully blended.
- In a small bowl, stir together the ketchup, maple syrup, mustard, and Worcestershire sauce.
- Grease a loaf pan and add meat mixture. Top with glaze mixture.
- Cook for 45-55 minutes to internal temperature of 160.
- Let rest for 10 minutes before slicing.
