Meatloaf with Cremini Mushrooms

Ingredients
  • 1 pound Tierra Verde Farms ground beef
  • 2 Tbsp butter
  • 2 cups cremini mushrooms, finely chopped (8 oz)
  • 1 cup onion, finely chopped (1/2 large onion)
  • 1 large shallot, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 3 cloves garlic, minced
  • 1/4 tsp cajun seasoning
  • 1/2 cup finely crushed saltine crackers (breadcrumbs will work)
  • 1/4 cup milk 
  • 1 large egg + 1 egg yolk
  • 1 large egg
  • 1 tsp Dijon mustard
  • 1 tsp ketchup
  • 1 tsp Worcestershire sauce
  • MEATLOAF GLAZE
  • 1/2 cup ketchup
  • 1 tsp maple syrup
  • 1/2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce

Directions

  1. Pre-heat oven to 375
  2. Melt the butter in a skillet over medium heat. Add the mushrooms, cover them with a lid or foil, and
    cook for 5 minutes. Uncover the pan and add the onion, shallot, and salt. Cook until the veggies are softened (5 to 10 minutes).
  3. Add the red bell pepper, garlic, and Cajun seasoning, and cook until the bell pepper is soft, about 5 minutes more. Let the mixture cool for 10 minutes.
  4. In a large bowl, combine the ground beef, cooled veggie mixture, saltine crackers, milk, egg, egg yolk, mustard, ketchup, and Worcestershire sauce. Mix well until the mixture looks fully blended.
  5. In a small bowl, stir together the ketchup, maple syrup, mustard, and Worcestershire sauce.
  6. Grease a loaf pan and add meat mixture.  Top with glaze mixture.
  7. Cook for 45-55 minutes to internal temperature of 160.
  8. Let rest for 10 minutes before slicing.
