Sheet Pan Sausage, Crispy Gnocchi, and Brocoli

Sheet Pan Sausage, Crispy Gnocchi, and Brocoli

Ingredients
  • 1# store bought shelf stable gnocchi
  • 1 large head of brocoli or cauliflower or combination of both (1#), cut into 1″ pieces
  • 1/4 C olive oil
  • 2 garlic cloves, finely chopped
  • salt
  • Crushed red pepper flakes (optional)
  • 1 # TVF Sweet Italian Sausage Links
  • 1/4 C. grated parmesan, plus more for serving
  • 1/2 lemon

DIRECTIONS:

  1. Heat the oven to 425 degrees.  Toss together gnocchi, vegetables, garlic, and olive oil until coated.  Spread evenly onto sheet pan.
  2. Slide small meatball sized chunks of sausage out of the casings onto the pan and scatter evenly.
  3. Season with salt and red pepper flakes.
  4. Roast until the sausage and brocoli are golden crisp, 20-25 minutes
  5. Remove pan from oven and squeeze the lemon juice over the mixture.  Sprinkle with parmesan cheese and allow cheese to melt.
  6. Serve topped with more parmesan or red pepper flakes.
