Italian Sausage, Farrow, and Tomatoes in One Pot!

Ingredients
  • 1 pound Tierra Verde Farms hot or mild italian sausage (chicken or pork)
  • 1 large yellow onion diced
  • 4 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 2 cups farro
  • 24 oz cherry tomatoes
  • 1/4 tsp red pepper flakes
  • salt/pepper
  • 4 oz fresh baby spinach
  • fresh basil and parmesan cheese for topping

Directions

  1. In a large stockpot, brown the sausage and onions, crumbling while it cooks, until the sausage is browned.  Add the garlic and cook for an additional 2 minutes.
  2. Add the broth, farrow, tomatoes, peper flakes, salt/pepper.  Combine and cook until the mixture boils.  Then reduce heat to simmer until farrow is tender (20-25 min).  Most of the broth should be absorbed.
  3. Add spinach and toss until spinach is wilted.  Adjust seasoning with salt/pepper
  4. Serve with parmesan cheese
  5. Calabrian chili paste can kick this up if you like it spicy!
